In India, raw mango pickle is a famous pickle and made during summer to preserve throughout the year. There are different methods of pickling in India. The key ingredients of traditional raw mango pickle are green mangoes, mustard paste, hot oil, chillies and other spices.

The tradition of the picking process goes thousands of years. Pickles are must add to our Indian Meal. Pickles add spices to the boring and unwanted dishes we have to eat. The pickling process has a long history as far as 2030BCE. The pickling process becomes popular through ages due to its benefits and nutritional values.  

Pickles are preserved for years hence it is famous as well as it is said that pickles offer physical and spiritual strength.

Quantity: 1.5 Kg

Taste: Sour and Spicy


  • 1 kg Raw Mangoes(कच्चा आंबा)
  • ½ cup Fennel seeds (बडीशेप)
  • ½ cup Fenugreek seeds (मेथीचे दाणे)
  • 1 cup Mustard Seeds (मोहरी)
  • ½ cup Cumin Seed (जिरे)
  • ¼ cup Turmeric powder (हळद)
  • 1 cup Red Chilli powder (मिरची पावडर)
  • ½ cup Coriander powder (धणे पावडर)
  • 2 teaspoon Asafoetida (हिंग)
  • 3 cup Salt (मीठ)
  • 1 cup Jaggery(गुड़)
  • 5 cup edible oil

How to make Traditional Raw Mango Pickle?

Take 1kg raw mangoes, cut into pieces.

Cut mangoes are available in these in the market

Spread, ½ cup turmeric powder and 2 cup salt on the cut mangoes

Mixed it properly and keep it overnight

Next morning, you can see yellow water is gathered in the pot

Drained the water (as we used readymade cut mangoes and those are not washed otherwise if mangoes are washed at home and then cut then you can keep this salty water in the pickle) and keep mango pieces aside

Take 2 cup split Mustard Seeds. If you don't get it then take 2 cup Mustard Seeds and grind it roughly.

Take a pan and heat it.

Add ½ cup Fenugreek seeds and stir it. Avoid overheating it.

When Fenugreek seeds are heated, add ½ cup Cumin Seed and ½ cup Fennel seeds and stir continuously

When it is heated, grind it finely and keep aside.

Heat the pan and add 5 cup oil to the pan.

When oil is heated, add 2 teaspoon Asafoetida to the oil.

Then add Mustard seeds powder in the oil

Put ½ cup Coriander powder to the oil

Then add ¼ cup Turmeric powder

Add 1 cup Red Chilli powder

Then add Fenugreek, Cumin, Fennel Seeds powder (which we kept aside)

Add ½ cup Salt into the oil and mixed it properly and switch off the gas

Cool down the masala

Once it is cooled down, add this masala into the mango pieces (which we kept aside)

Mix it properly and add 1 cup Jaggery into the pickle and mix it.

Store it in a clean, dry jar.

Mixed it once in a day for a week

Ready to eat.

Special Note

  • You can use yellow color Mustard seeds instead of black.
  • Even in some areas, you get splitted Mustard seeds, which can be used also.
  • Wash mango before cutting it, don’t wash mangoes after cutting.
  • If you don’t have proper cutting blade then purchase mangoes then get it cut from them. (Cutting charges are extra)
  • If you are using readymade cut mangoes then don’t wash it.
  • If you do not have option for readymade cutting or you don’t have blade then just cut with knife without cutting its seed. Seed is too hard to cut with regular knife.

How to preserve Traditional Raw Mango Pickle?

This is a traditional raw mango pickle. It can be stored in a glass or ceramic jar for years. Make sure that oil floats on the pickle to increase its shelf life.

How to Serve Raw Mango Pickle?

  • Pickles are part of Indian meals. It can be eaten on a regular basis with any meal.
  • You can serve this pickle with Roti/Chapati/Paratha.
  • You can eat it with Dal-Rice. 
  • It tastes best with Parathas/Thalipeeth. 
  • You can serve it with a daily meal which can be used as a taste enhancer due to its tangy flavour.
  • This pickle is the best option to eat with Roti/Chapati for odd time hunger.
  • It would be a good option to dislike Sabji (vegetables/curry).

Pickles are always stored in oil and salt, both are not good for diabetic people and high blood pressure. So I suggest you eat Mango pickles in daily meals but in moderate quantities.
