How to make Sweet Potato Chutney?
Rinse 2 sweet potatoes. Add the sweet potatoes in the pressure cooker. Pour water in the cooker so that water level could be little above the sweet potatoes.
Cook for 2 whistles so that sweet potatoes are softened.
Take a pan. Heat it.
When the pan is heated. Add 1 teaspoon oil and let oil heat.
Add 1 teaspoon Cumin Seeds, 2 teaspoon Urad Dal as well as 4-5 Dry Red Chillies and stir it continuously to avoid burning. Let it cool down.
Take cooked and softened sweet potatoes and peeled it.
Mash these potatoes properly.
Take a mixer jar. Add cooled down Cumin seeds, Urad Dal and dry Red chillies as well as 1 cup grated coconut.
Similarly, add 2 teaspoon Tamarind. Grind it coarsely.
Then add mashed sweet potatoes and add 1 teaspoon salt in it and grind it properly.
If it is too thick then add water as per your choice. If you want thick chutney then add less water otherwise add more water to get a slightly thin chutney. Take out the mixture in the bowl.
Take a tadka pan. Heat it. Pour 1 teaspoon oil and heat it. When oil is heated, add 1 teaspoon Mustard Seeds and 2-3 dry Red chillies.
Finally, pour this tadka on the chutney mixture.
Ready to serve.
