Ingredients

  • 25 Lemons (लिंबू )

Dry Masala

  • Red Chilli powder (मिरची पावडर)
  • Salt (मीठ)
  • Sugar (साखर)
  • Jaggery(गुड़)

How to make Sweet Lemon Pickle without oil?

Washed Lemons.

Dry it with cloth. Make sure there is no wetness left on the lemons.

Take 15 Lemons and cut each lemon into 8 small parts.

Remove all seeds from the cut lemons to avoid bitter taste of lemon seeds.

Take remaining 10 Lemons and cut those in two parts each.Squeeze the lemons and keep juice in one bowl.Remove the seeds from the lemon juice.

Take a fry pan and add cut lemons into it. Don't switch on the gas.

Add 3 cup sugar into it.

Add ½ cup Jaggery into it.

Add ½ cup salt into it

Add lemon juice into it.

Add 3 teaspoon Red Chilli Powder into the mixture.

Stir the mixture continuously till sugar is dissolved into the lemon juice.

Switch on the gas and stir the mixture continuously.

Cook the mixture for 5 minutes and switch off the gas.

Take it out of the gas and let it cool down.

Store this pickle in the glass or ceramic jar.

Shake the mixture once in a day for a week.

Ready to eat. You can eat it after 8 days or wait for 15 days as it will be soaked properly.

Special Note

  • This pickle can be eaten during the fast.
  • You can add more sugar or jaggery after tasting the pickle.
  • While cooking the pickle, if the side of lemons started to turn backwards. Switch off the gas.

If care of this sweet and sour lemon pickle is taken properly then it  can be stored for years. I would suggest you shake this sweet lime pickle once in a month. 

After years, when the juice of this pickle is soaked then the color of lemon pieces turns blackish. More the black color of lemon pickle pieces, its health benefits increased. Mainly salt and oil is used as preservatives in the preparation of pickle. But our Sweet lemon pickle is without oil.
