Method Of Lal Mirch Ka Achar / Red Chilli Pickle
Take 1 cup Red Chillies. Remove its stem. Wash it and dry it with cloth. There should not be moisture in the chillies.
First, give a small cut to each Red Chilli
Second, take all cut Red Chillies in a bowl.
Next, add ⅓ cup Salt and mix it with Chillies.
Then, keep it aside as Salt will be absorbed by cut Chillies.
Afterward, take a pan. Heat it.
Now, add 2 teaspoon Fenugreek seeds, 1 teaspoon Fennel seeds, 3 teaspoon Cumin seeds and roast it.
Take mixer jar.
Add ⅓ cup Mustard Seeds and roasted Fenugreek seeds, Fennel seeds and Cumin seeds. Blend it coarsely. Keep this aside.
Again, take a pan and heat it.
Pour 1 cup oil in it. When oil is heated, switch off the gas and let the oil cool down.
Then, take a bowl where Red Chillies with salt are kept. You can see Salt is absorbed by the Chillies and Chillies looked watery.
Add blended masala, ⅓ cup Coriander powder, 2 teaspoon Red Chilli Powder, 1 teaspoon Turmeric Powder, 2 teaspoon dry Mango Powder. Mix it properly.
Finally, add heated and cooled oil and mix it.
Store this pickle in a clean ceramic or glass jar.
Shake this Lal Mirch ka Achar once in a day for a week.
Lal Mirch ka Achar is ready to serve.
