Red Chilli Pickle or lal mirch ka achar is spicy and sizzling pickle to taste. It is a very common pickle among Indian Households. It can be served with Indian food like Roti or Paratha or Rice. This pickle is the best way to include spice in your meal.

The main ingredient used in this spicy pickle is wet Red Chilli which is mixed with masala made up of Fennel seeds, Mustard Seeds, Red Chilli powder, Coriander powder, Cumin Seed, Turmeric powder, Fenugreek seeds, Dry Mango Powder, Salt. The flavours of these masala ingredients mixed well with salt soaked Red Chillies and the spicy Red Chilli Pickle is ready.

Wet Masala

  • Red Chillies(लाल मिर्च) 

Dry Masala

  • Fennel seeds (सौंप )
  • Mustard Seeds (राई )
  • Red Chilli powder (मिरची पावडर)
  • Coriander powder (धनिया पावडर)
  • Cumin Seed (जीरा )
  • Turmeric powder (हल्दी पावडर )
  • Fenugreek seeds (मेथी बीज )
  • Dry Mango Powder(आमचूर पावडर)
  • Salt (मीठ)
  • Edible oil

Method Of Lal Mirch Ka Achar / Red Chilli Pickle

Take 1 cup Red Chillies. Remove its stem. Wash it and dry it with cloth. There should not be moisture in the chillies.

First, give a small cut to each Red Chilli

Second, take all cut Red Chillies in a bowl.

Next, add ⅓ cup Salt and mix it with Chillies.

Then, keep it aside as Salt will be absorbed by cut Chillies.

Afterward, take a pan. Heat it.

Now, add 2 teaspoon Fenugreek seeds, 1 teaspoon Fennel seeds, 3 teaspoon Cumin seeds and roast it.

Take mixer jar.

Add ⅓ cup Mustard Seeds and roasted Fenugreek seeds, Fennel seeds and Cumin seeds. Blend it coarsely. Keep this aside.

Again, take a pan and heat it.

Pour 1 cup oil in it. When oil is heated, switch off the gas and let the oil cool down.

Then, take a bowl where Red Chillies with salt are kept. You can see Salt is absorbed by the Chillies and Chillies looked watery.

Add blended masala, ⅓ cup Coriander powder, 2 teaspoon Red Chilli Powder, 1 teaspoon Turmeric Powder, 2 teaspoon dry Mango Powder. Mix it properly.

Finally, add heated and cooled oil and mix it.

Store this pickle in a clean ceramic or glass jar.

Shake this Lal Mirch ka Achar once in a day for a week.

Lal Mirch ka Achar is ready to serve.

Special Note

  • If you want more oily pickle then you can increase the quantity of oil
  • If you like Mustard Oil then you can add Mustard Oil. If we use Mustard Oil then there is no need to heat the oil. This can be no heating recipe for red chilli pickle.
  • If the chillies are crunchy then it needs more days for this pickle to mature. The chillies should be softened after 1 week.
