Raw Mangoes are available throughout the year now-a-days in India. Raw Mangoes are extremely beneficial for health. Due to its health benefits, raw mangoes are eaten house to house in different forms like eating raw mangoes with salt or using raw mangoes in salads or using raw mangoes in chutney or making its sarabat called panna or pickle. I would prefer Raw Mango Pickle.

In Summer, Raw Mangoes are available abundantly in all over India. So, it is used in meals in different forms. There are different ways of eating raw mangoes. One of the ways to include Raw Mango in your meal is Pickle. Raw Mango Pickle is very healthy and its taste is mouth watering. Raw Mango Pickle goes well with all types of Indian Bread like Chapati/Paratha.

  • 2-3 Raw Mangoes (कच्चा आंबा)
  • 1 teaspoon Fennel seeds (बडीशेप)
  • 1 teaspoon Fenugreek seeds  (मेथीचे दाणे)
  • ⅓ cup Mustard Seeds (मोहरी)
  • 4 teaspoon Cumin Seed (जिरे)
  • 2 teaspoon  Turmeric powder (हळद)
  • 5 teaspoon Red Chilli powder (मिरची पावडर)
  • 5 teaspoon Coriander powder (धणे पावडर)
  • ½ teaspoon Asafoetida (हिंग)
  • ½ cup Salt (मीठ)
  • 3 teaspoon Sugar
  • 1 cup edible oil

How To Make Raw Mango Pickle?

Note - this is a method for temporary raw mango pickle.

Washed Mangoes and dried it with clothes.

Cut Mangoes into small pieces.

Add 2 teaspoon Turmeric powder and 4 teaspoon Salt in the cut Mangoes and mix in properly. Keep the mixture aside for 5 hours. Mixed it 2-3 times.

Take a pan. Heat it. Add Fennel seeds and stir it continuously. When Fennel seeds change their color, take it out  from the pan and let it cool.

Now add Fenugreek seeds in the pan and heat it. Stir it continuously. When Fenugreek seeds change their color, take it out from the pan and let it cool.

Now add Cumin seeds in the pan and heat it. Stir it continuously. When Cumin seeds change their color, take it out from the pan and let it cool.

Take Fennel seeds, Fenugreek seeds and Cumin seeds in a mixture pot and blend it. Let it blend to a smooth mixture. Keep it aside.

Take Mustard seeds and blend it so that its black cover will remove from the seed.You can remove those covers or keep it as it is. I always keep it as it is.

Now all ingredients are ready with us and time to cook.

Take a pan and heat it. Add Asafoetida then add 1 cup oil in it. Let the oil get heat. Then add Mustard seeds mixture in it. Stir it continuously for 1 minute and then add  Fennel seeds, Fenugreek seeds and Cumin seeds mixture. Stir it continuously. Add Red chili powder and Coriander powder in it. Stir it continuously for 1 minute. Take it out from the gas and let it cool down.

Add this mixture into the cut Mangoes and stir it properly.

Add Sugar into it.

Store it in an air-tight jar.

Special Note

  • You can use yellow color Mustard seeds instead of black.
  • Even in some areas, you get crushed Mustard seeds, which can be used also.
  • You can use jaggery instead of sugar.

  • Pickles are part of our daily meal. It can be eaten on a regular basis with any meal.
  • You can serve this chutney with Roti/Chapati/Paratha.
  • You can eat it with Dal-Rice.
  • It tastes best with Parathas/Thalipeeth.
  • You can serve it with a daily meal which can be used as a taste enhancer due to its tangy flavour.
  • This pickle is the best option to eat with Roti/Chapati for odd time hunger.
  • It would be a good option to dislike Sabji (vegetables/curry).

How to preserve Raw Mango Pickle?

This is a temporary pickle so better to store in an air-tight jar and keep it in the refrigerator. This can be stored for 10-15 days in the refrigerator.

Disadvantages of Eating Raw Mangoes

Consumption of too many raw mangoes can cause indigestion, and irritation in the throat.

Even Mango pickles are preserved in oil and salt throughout India and if they are extraordinarily bitter, spicy and oily which are not good  for health and should be avoided by those who have inflammatory disease, rheumatism, sinusitis, pharyngitis and acidity.
