Instant Sour Lemon Pickle is an easy, tasty and healthy pickle. Even though some people like pickles but they can't eat it due to health issues they are suffering with. But, there is one pickle i.e. Lemon Pickle which is also recommended by Ayurveda.

Matured Lemon Pickle is having health benefits for stomach disorders and it can be eaten by elders who are having health issues. This is no oil pickle hence its good for health. Even Vinegar is not used while preparing this pickle. This pickle is made up of only 4 ingredients hence its economy.

  • 25 Lemons (लिंबू)

Dry Masala

  • Turmeric powder (हळद)
  • Red Chilli powder (मिरची पावडर)
  • Salt (मीठ)
  • Sugar (साखर) (optional)

How to make Instant Sour Lemon Pickle?

Washed Lemons.

Dry it with cloth. Make sure there is no wetness left on the lemons.

Sort out good lemons as over ripped lemon may reduce the life of this pickle. So, if you want to preserve it for a long  duration then make sure about the quality of lemon.

Take 15 Lemons and cut each lemon into 8 small parts.

Remove all seeds from the cut lemons to avoid bitter taste of lemon seeds.

Take remaining 10 Lemons and cut those in two parts each. Squeeze the lemons and keep juice in one bowl. Remove the seeds from the lemon juice.

Take cut lemons in one bowl.

Add 2 teaspoon Turmeric powder, 3 teaspoon Red Chili powder into the lemons.

Add 2 cup salt into the mixture. Mixed it properly.

Add Lemon juice into the mixture and mix it properly.

Keep the pickle in the glass or ceramic jar.

Shake the pickle for once in a day for 7 days regularly.

Ready to eat.

Special Note

  • If you want, sweet and sour taste, you can add 1 cup sugar into the pickle and enjoy the sweet and sour lemon pickle.
  • If you want, sour and spicy taste, you can increase the quantity of red chilli powder.
  • Proportion of the Instant Sour Lemon Pickle can be changed with lemons available.
  • Make sure to shake the pickle for 1-2 month once in a week. So that it can be soaked properly.
  • To preserve this pickle for a long duration, add 1 cup of salt after 1 week and shake it properly.

  • Instant Sour Lemon Pickle can be served with any meal.
  • It is the best taste enhancer for someone recovering from a fever and having a bad taste bud.
  • Instant Sour Lemon Pickle can be served with Roti and Sabji.
  • Instant Sour Lemon Pickle can be served with plane Dal-Rice. With this pickle plane Dal-Rice tastes superb.
  • This Instant Sour Lemon Pickle can be served with any Bhakari(Jowar/Bajra/Rice).
  • This pickle can be served with snacks like Poha/Upma/Chiwda.

How to preserve Instant Lemon Pickle?

  • This pickle can be prepared in less time but can be preserved for a long duration.
  • Salt and Sugar are preservatives used in this pickle. Hence, if proper care( like shaking the pickle and checking its taste) is taken then it can be preserved for a long duration like 2-3 years.

My experience with Instant Lemon Pickle.

Instant Lemon Pickle as the name suggests, prepared in very less time. So, it's time efficient. It can be eaten the day after it's prepared hence I loved it.

Matured Lemon Pickle has health benefits hence its favorite among elders at home. It's always available to eat in my home. We always prepare Lemon Pickle every year when there are abundant good quality lemons available in the market  to preserve for 2-3 years so that elders at home can have matured pickle every year.
