Bitter Gourd Pickle is prepared with Bitter Gourd mixed with spices like Fennel seeds, Fenugreek seeds, Mustard Seeds, Cumin Seed, Turmeric powder, Coriander powder, on Red Chilli powder, Asafoetida.

All these spices and Bitter Gourd slices and mixed with  Mustard Oil and when it is kept for a week. Then all spices taste is consumed with Bitter Gourd slices. This Bitter Gourd Pickle is also called Karela Pickle or Karela ka Achar. It tastes good. Even bitter gourd pickle andhra style is also famous.

Ingredients

  • 3-4 Bitter Gourd (करेला)

Wet Masala

  • Lemon(निम्बू)

Dry Masala

  • 2 teaspoon Fennel seeds (सौंप )
  • 2 teaspoon Fenugreek seeds  (मेथी बीज )
  • 4 teaspoon Mustard Seeds (राई )
  • 2 teaspoon Cumin Seed (जीरा )
  • 1 teaspoon Turmeric powder (हल्दी पावडर )
  • 1 teaspoon Coriander powder (धनिया  पावडर)
  • 2 teaspoon Red Chilli powder (मिरची पावडर)
  • ¼ teaspoon Asafoetida (हिंग)
  • ½ cup Salt (नमक )
  • 2 cup Mustard Oil (राई का तेल)

First take Bitter Gourd and rinse it with water thoroughly.

Second when there is no moisture left on Bitter Gourd then chop it in slices.

Next take all Bitter Gourd slices in one bowl and sprinkle 4 teaspoon Salt into it and rinse the Salt to Bitter Gourd properly. Keep it aside for 30 minutes.

After 30 minutes, squeeze the salted Bitter Gourd and drain the juice. Let the Bitter Gourd dry for 30 minutes.

Afterward, take a pan. Heat it.

Now, add Fenugreek seeds, Fennel seeds, Cumin seeds and roast it.

Take a mixer jar.

Add  Mustard Seeds and roasted Fenugreek seeds, Fennel seeds and Cumin seeds. Blend it coarsely. Keep this aside.

Again, take a pan and heat it. Pour Mustard Oil in it. When oil is heated, add Asafoetida then add blended masala, Coriander powder, Red Chilli Powder, Turmeric Powder. Switch off the gas. Mix it properly.

Finally, add sliced Bitter Gourd in the masala and add Lemon juice and mix it.

When cooled down, store this pickle in a clean ceramic or glass jar.

After 8-10 days, this pickle is ready to eat.

Special Note

  • You can rinse the sliced and salted Bitter Gourd with water to get out all bitterness from it. But, then you have to dry all sliced Bitter Gourd with cotton cloth.
  • We can add 7-8 Garlic Cloves in this Pickle

How to preserve Bitter Gourd Pickle or Karela ka achar ?

This pickle can be preserved for 10-15 days at room temperature. If you want to increase the shelf life of this pickle then add more oil so that it can float on the pickle. You can even store this pickle in the refrigerator.

  • If you like taste of Garlic, then you can add 9-10 Garlic in this pickle
  • We can add 9-10 Green Chillies in this pickle
